摘要: |
目的 解决单一组分壳聚糖成膜性能不佳,无法满足食品包装商业应用需求的问题。综述壳聚糖基保鲜膜/涂层应用于食品包装领域的可能性。方法 对现有文献进行系统梳理并综合分析,介绍壳聚糖基保鲜膜/涂层的多样化制备技术、改性策略及性能表征,并概述壳聚糖基保鲜膜/涂层在食品包装领域最新的应用研究进展。结论 通过对壳聚糖进行物理/化学改性,可以显著改善其光学、力学、阻隔和抗菌等方面的性能。最后对壳聚糖基保鲜膜/涂层在食品包装领域的应用潜力进行了展望,指出了未来研究的重点方向。 |

Abstract: |
The work aims to address the limitation of single-component chitosan film-forming capabilities, which fall short of commercial food packaging requirements, and explore the potential of chitosan-based fresh-keeping films/coatings within the realm of food packaging. By reviewing existing literature, the preparation technologies, modification strategies, and performances of chitosan-based fresh-keeping films/coatings were presented, offering a comprehensive overview of their recent applications in food packaging. In conclusion, the optical, mechanical, barrier, and antimicrobial properties of chitosan can be significantly enhanced through physical and chemical modifications. Finally, this review envisages the future applications of chitosan-based fresh-keeping films/coatings in food packaging and highlights key directions for forthcoming research. |
